Yamburger Recipe
Ingredients:
- 2 large sweet potatoes (or yams), peeled and diced
- 1/2 cup of black beans (canned or cooked)
- 1/4 cup of breadcrumbs (gluten-free if preferred)
- 1/4 cup of chopped fresh cilantro
- 2 green onions, finely chopped
- 1 egg (or flax egg: 1 tbsp ground flaxseed + 2.5 tbsp water)
- 1 tsp ground cumin
- 1/2 tsp smoked paprika
- 1/2 tsp garlic powder
- Salt and pepper to taste
- 1-2 tbsp olive or avocado oil for cooking
- Burger buns and desired toppings (lettuce, tomato, onion, avocado, etc.)
Instructions:
- Prepare the Sweet Potatoes: In a pot of boiling water, cook the diced sweet potatoes until they're soft (10-15 minutes). Drain and cool slightly.
- Mash the Ingredients: In a bowl, mash the sweet potatoes and black beans together.
- Mix and Season: Add breadcrumbs, cilantro, green onions, egg, spices, salt, and pepper. Mix well.
- Form Patties: Divide into 4 portions and shape them into patties.
- Cook the Yamburgers: In a skillet, heat the oil over medium heat. Cook patties for 4-5 minutes on each side until golden brown.
- Assemble and Serve: Toast buns, place a patty on each, add toppings, and serve.
